Elaine and Keith have been making chocolate since 2018. It started as an exploration into learning more about the process and figuring out how to do it on their own. Learn more about them and their chocolate journey. Helpful hint: a mortar and pestle isn't an efficient way to make chocolate.

How chocolate is made

Before they started making chocolate, Keith and Elaine didn't even know what cacao looked like, that the beans are fermented, or that they roast at a much lower temperature than coffee. Here we'll give a quick and easy guide to where chocolate comes from and how it's made.

Where do we get our beans

Who knew that cacao is grown all over the world in many different countries across almost all continents? Here we'll go into where we like to get our beans from, and how different regions and climates can produce dramatically different flavor profiles. Which one is your favorite?

What's different about our process

We think we have the best tasting dark chocolate and it's all about the process. The great thing about making small batch chocolate is that we can experiment and perfect the process per bean and get the most of the flavor profile. While we won't give you the exact details, we'll nerd out a bit about how we came up with our process.
